Ultimate Chicken Tortilla Soup

I love some Chicken Tortilla Soup. Like a lot, I could probably eat it every day. Absolutely anything with cilantro and cheese has my full attention, this has both. Oh and cumin, how could I forget my top favorite seasoning, after salt of course. You just can’t help but love all these things.

This recipe may look like it has a lot of ingredients but it is so incredibly easy.

Start by cutting your chicken into chunks or strips whichever you prefer and throw them into your pot. Then work on opening all of your cans. Drain your black beans and dump them in. Dump in the chili beans, mexican corn, green chilis, ranch mix, taco seasoning. Add the cumin because well you can never go wrong with extra cumin. Chop up some cilantro and toss it in. Cilantro makes everything better doesn’t it?

Add the chicken broth. You can be the judge if you need more or less. I like my chicken tortilla soup with extra broth so I tend to add a little more chicken broth to get it super soupy. Cover and let cook over medium heat for 30 minutes or until chicken is done.

Almost ready!

 

Grab your bowl and scoop some of this delicious goodness in. Top with cheese, sour cream, tortilla strips, splash of freshly squeezed lime juice and pico or extra cilantro.

This is also a great recipe for your crockpot. I make it in there about 90% of the time.  Cook on low for 6 hours or high for 4 hours. It comes out just as delicious!
